(Serves 4)


3 whole King George Whiting (gutted and scaled)

Extra virgin olive oil

2 tablespoons baby capers (drained)

50 g (1/2 cup) pine nuts (lightly toasted

Salt and pepper

Lemon wedges


Lay the fish on a plate, drizzle with oil and season with salt/pepper.

Preheat a barbecue to medium or place a large frying pan over medium heat and cook the whiting for 2 minutes each side or until lightly browned and just cooked. Transfer the whiting to a platter and drizzle with extra oil.

Scatter over capers and pine nuts, then squeeze over lemon juice to serve.
